I had forgotten I had run out of tahini paste. I didn’t want to leave the house just to buy tahini paste, yet I had planned my food for the week around having hummus.
I did have some peanut butter, and I remember in Jack Monroe’s first cook book ‘A Girl Called Jack’ that they referenced putting peanut butter in their hummus, so I thought I would give it a try.
It’s a game changer.
So I thought I would share with you what I’m having for lunch this week.
PEANUT BUTTER HUMMUS
120g Smooth Peanut Butter
6 Tablespoons Extra Virgin Olive Oil
1 x 400g Tin of Chickpeas, drained
1 Tablespoon Lazy Garlic
5 Tablespoons Lemon Juice
Drain the chickpeas, keeping the aquafaba if you are that way inclined
Add the chickpeas to a food processor along with all the other ingredients
Season and enjoy!
