This is an update on the fish cakes recipe I posted back in April, I think this one is much better!
INGREDIENTS
1 x tin of mackerel in olive oil
1 x tin of sardines in olive oil
1 x jar of anchovies
3 x potatoes, chopped, skins on
2 heaped tbsp. of plain flour
MAKES 5 FISHCAKES
METHOD
Chop the potatoes up small (so they cook quicker) and bring to the boil
Cook until they are tender
Drain, mash, then set aside to cool
Once cool open up all the tins and jars of fish and drain the olive
Mix the fish up so it is in smaller pieces, then add to the cool mash
Add the two spoons of plain flour and combine everything all together
Shape into 5 fishcakes
Place on a greased baking tray and cook in the oven on 220 degrees for about 30 minutes until crisp
Serve with sweet chilli dipping sauce
