I fancied making a sweet treat today, and I impulsively had bought a tin of black treacle during the start of lockdown, so I decided to make the most of it now. It turns out my pack of dates, also bought on impulse during lockdown, and were nearing expiration, so it was good to use them up too.
INGREDIENTS
250G self-raising flour
1 tsp. baking powder
½ tsp. bicarbonate of soda
½ tsp. ground ginger
½ tsp. mixed spice
1 tsp. cinnamon
175g dried dates, chopped
100g black treacle
80g vitalite
80g coconut oil
100ml warm water
MAKES 8 BARS
METHOD
Mix all the dry ingredients together
In a pan add the dates, vitalite, coconut oil, water and black treacle and cook over a low heat until combined
Add the wet ingredients to the dry ingredients and mix together
Place in a greased and/or lined baking tin and cook at 220 degrees for about 25 minutes until a skewer comes out clean
